 percent of sales

I was looking at plan and was calculating percent of sales. What I am a bit confused on now is when calculating do I include gross sales from the bar? Or do I keep bar sales seperate from the restaurant sales when calcuating serving food sales? What my goal is to percent out each service breakfast lunch and dinner along with bar sales. But the gross sales I established on excell included the bar sales which is not related to any one service. So I am thinking I would not include them in this instance. Right? By bar sales I mean drinks served where no food is included as a service just drinks.

Hank,
 Bar sales are usually a line item in your P&L before total sales,
 Bar sales could be further split into beer, wine and liquor.

Soft drink are typically included in food cost but could also be split into its own category,

Have you played with the restaurant feasibilty spreadsheets for table service from RO.com at all??
It should answer your questions.

 Liquor and Food should be seperate

Hi Hank,

 

When caculating food cost percentages, you should not include beer, wine or liquor sales into the total.  This is usually caculated seperately and generally speaking, your cost of goods for beer, wine and liquor as a percentage of sales should be lower than your food cost.  Hope this helps!

Hi Hank,

I'm with ChefMel... food cost should be food cost only (excl bev, alc, etc) / food sales.  I like to look at them all separate - food cost, non-alc bev cost, alc cost, retail cost, and then add in labor cost and look at as one COGS for breakeven purposes.

Thanks everyone. I am second guessing myself  again. Any way here is a update. My bank had a loan officer change and I will have my first meeting with her. Dotting  " I and T"  on my plan and will take it to the accountant to look over finance from there SCORE then offical request for backing. This should start the sales of the property to me to reach the end price.
