 Creating Gluten Free Menu Items

Does anyone know who I might contact to have some of my restaurant recipes converted to "gluten free".  I am located in DFW, Texas.

I would contact the Texas Registered Dietitian Association.  They can give you a list of freelance RD who can convert your recipes and field test them.

Personally, since gluten is in everything, I would just hire them to create a series of gluten free dishes for you.  They might not be able to get rid of the gluten and keep the flavor profile......

Good evening,

Here is a source we have used in the past for gluten-free components and mixes.

I only carry a couple of gluten-free items in our theme park bakery.

Hi Billy,

We developed our gluten-free options in-house - you just need a working knowledge of what celiac-sufferers need to avoid.  There are plenty of resources online.

We have two levels - completely gluten-free as ordered, and, could-be gluten-free.

Also, in my experience - it's easier to make new gluten-free items than to convert non-gluten-free items.

There are several ways to approach gluten-free from being aware to actually being certified.  www.glutenfreerestaurants.org has a front and back of the house training program.

If there is a gluten free menu and a level of competency please market your restaurant to the gluten free community.  Texas has quite a few very active groups!   Google gluten free support group in your town to find a willing customer base.  Advertise nationally for vacationers on www.glutenfreeonthego.com and glutenfreeregistry.com.  They will list your restaurant for maximum exposure. 

If you are going to the NRA I will be at the Swiss Chalet Fine Food Booth on Sunday. They have  HACO's gluten free soup base/roux and sauce line that is certified.  Ask for Ronni-  I'm their dietitian and do their food allergy training.
