 Shredded lettuce?
Hello everyone, I want to open up a small Deli in Los Angeles and need to know where I can buy my produce. How do I go about finding pre- shredded Iceberg lettuce, the kind that you get at subway for instance. Thank you for your help, Popone

Are you sure you want to go with pre-packaged, shredded lettuce?  As a consumer, I hate it.  As a restaurant owner, I tried it for a while once, my customers raised all he!!, so I went back to regular leaf iceberg lettuce.  Crisp and fresh.

i use shredded lettuce for burgers and chicken sand, and it stays pretty crisp. i am more fast food, if i were more casual id prob try to use lettuce leaves.

any distributor should carry it, for sure rest depot of a gfs type store.

I'm about to start my scariest venture yet (given the economic climate) and shredded lettuce on sandwiches is something that I've given way too much consideration.  I've always used leaf lettuce but I really don't like the flavor personally but it looks so good.  The national qsrs all use shredded.  I like iceberg on my sandwiches.  What's the opinion here or is there one?

If you have a deli, then you have a slicer.

Save money by not buying pre-packaged.  Lettuce holds longer in a whole state also.

You will have less waste, You'll be able to do up exactly the amount you need for a shift and will not be throwing away bags/handfuls of brown lettuce everyday.

Dollars and Sense.

Also, the market report prices on this website, are these prices i could expect to pay for different foods or are these prices that farmers sell their products for, they seem awfully low. I'm sorry I'm a newbie in this whole field!

Most pre-shredded lettuce has been washed in a solution to keep it from turning brown. Shredded lettuce versus whole heads equals more surface area to turn brown. Shred it yourself, move it from the slicer to ice water, then keep it cold, cold, cold.

Popone - the prices you see in our produce market reports are pre-distribution (shipping point)  

Don't expect the same prices, just use it as a market monitoring tool.

 

From our FAQ section...

Produce - Prices are per case as specified, shipping point average not including freight, unless denoted with “Term.” “Term” noted markets are the terminal produce point selling price average from the Los Angeles, Chicago, New York and Atlanta produce terminal markets.
